Lemon Chia Seed Scones with Sweet Cashew Icing (Vegan, Say It With Me)






Hi Cats!

Sorry, I've been lame this April with the blog. Today was a good Sunday so I am wrapping up the weekend with my recipe for these lovely little scones. Scones are not too sweet and go great with tea (or so say the British?) who knows I've barely read up on the history of scones. But I do love me some scones because they are pastry-like, and can be made healthy-ish.

So I've used a combination of oat flour, flour, and whole wheat flour. When you think about the mostly healthy flour + low sugar you kind of can say, look at me, eating my healthy breakfast scone. But not really.


Anyway, let's get right into it.









What you need

1/2 cup oat flour
1/2cup regular flour
1/2 cup whole wheat flour
Juice of 2 lemons
2 tablespoons chia seeds
3 tablespoons sugar (yeah, that's it)
1 tablespoon vanilla
1/4th cup Cold Coconut oil (needs to be hard so you can chip pieces of it)
1/2 cup Almond Mylk (or any plant based mylk like soya)
2 pinchs of salt


Cashew Icing

1/2 cup cashews
1/4th cup soya/almond/coconut milk
1/4th cup sugar
pinch of salt
splash of vanilla


How to Make

You can make oat flour by simply tossing regular dry oats in the blender. Voila: oat flour! In a large bowl add your flours, salt, sugar, and vanilla, chia seeds.

Now add your chipped pieces of coconut oil. The thing is it will be lumpy, but that how it needs to be for your scones to come out nice and flaky.

Make sure your coconut oil has been sitting in the fridge ya'll




With your hands mash up the mix with the chips of oil. Now add your almond mylk and make a dough out of it.

It's Dough! 






Flatten your dough on a large baking tray and cut into triangles or make circles (like I did).
Pop it into the oven at 180c for about 15-16 min.





Meanwhile in a blender add your cashew, sugar, salt, vanilla, and mylk and blend. Yay your icing is done!

Wait for your scones to cool a little and then drizzle your icing on. Wasn't that easy?
Now go invite your friends for High Tea. Or just eat them yourself, because they are kind of healthy, remember?
